What is allulose?

A rare sugar. It turns up naturally in small amounts in foods like figs and raisins, and it tastes like sugar. We use it instead of added sugar.

Does it taste sweet like normal chocolate?

Sweet, yes. Candy-sweet, no. It's a 70% bar with roasted hazelnuts: rich, toasty, a proper snap, without the punishing bitterness of a 90% bar.

Why no maltitol or stevia?

Maltitol is known for bloating. Stevia leaves an aftertaste, and it isn't permitted in chocolate in India anyway. Allulose had neither problem, so it got the job.

In peak summer that usually means the fridge. Wrap it well so it doesn't pick up smells, and give it ten minutes out of the fridge before eating for the best snap.
